Instructions
- In a food processor or manually, mash the banana to form smooth puree
- Mix in the eggs (and add in sugar if using) to form pancake mix (The riper the banana, the less need for sugar. also depends on your level of taste)
- Lubricate a non-stick pan surface with 1 Tsp coconut oil and pour in 1 large scoop/cup of the pancake mix (Fry on medium heat as these pancakes have a tendency to burn much quicker)
- Flip the sides once slightly firm and browned, and serve one sturdy.
- Repeat the same process till all the mix is exhausted. (You might get more or less than 27 slices, depending on your desired pancake thickness)
