- 24 Cooked Ham Slices (you can also use bacon or courgette slices for an even lower calorie option)
- 24 Eggs
- 5 Spring Onions
- 200 gram Mixed peppers
- 1.25 Cups Bulgur wheat (cooked)

Instructions
- Set oven to 160C
- Grease oven tray with rapseed oil or butter
- Lay ham slices in each muffin tin, ensuring that the ham is completely inserted into the groove, and no space is left underneath
- Add in stuffing (vegetables, bulgur wheat etc)
- In each muffin pod, break in one egg, ensuring the yolk is at the top
- Sprinkle a pinch of sea salt & black pepper atop
- Sprinkle some grated cheese atop egg yolk (Optional)
- Place tray in oven, and bake for 20 minutes, until the yolk is formed (as formed as you like), and ham is slightly browned/cheese is melted
- Remove from oven and allow to set for roughly 5 minutes ... then Enjoy!
