Ingredients (for 10 servings)
- Avocado (Blended or mashed) (1)
- Carob Fruit Syrup [or honey] (120ml)
- Sea Salt (1 pinch)
- Cocoa Powder (1 Cup)
- Buckwheat Flour [or blended oats, wholemeal flour](125g)
- Dark/White Chocolate Chips (¾ Cup)
- Eggs (2)
- Protein Powder (Optional) (1 Cup)
Instructions
- Set oven to 180C
- Separate the egg whites from the yolk. Mix the whites in a large mixing bowl till it gets fluffy
- Add in the yolk, avocado and honey till smooth consistency
- In another bowl, mix the dry ingredients
- Slowly add in the dry ingredients to the wet mix and whisk till smooth consistency attained
- Fold in the chocolate chips
- Line Muffin pan with oil or muffin parchment paper
- Even distribute/spread mixture in muffin pots/pan
- Place pan in oven for 25-30 mins
- Remove from oven and allow to stand for 10 minutes before serving or storing.
