Shout out to my South African Folk! I learned this from a friend, and its turned out to be quite useful as a meal prep meal; plus its well yummy! One of those meals you can choose to have on its own or with a side
Ingredients (for 6 servings)
- Coconut Oil (50ml)
- Onion (1)
- Sea Salt & Pepper (Pinch)
- Minced Beef/Lamb (500g)
- Chopped Apple [Finely sliced] (½)
- Dried Apricots [Finely sliced] (2)
- Fresh Cream (150ml)
- Cayenne Pepper (Pinch)
- Curry Powder (10ml)
- Ground Cinnamon (2.5ml)
- Tomato [Diced] (1)
- Flaked Almonds (75ml)
- Dessicated Coconut (60ml)
- Balsmic Vinegar (45ml)
- Eggs [for topping] (4)
- Fresh Cream [for topping] (200ml)
Instructions
- Dice Onion and place in frying pan with coconut oil till brown
- Break Mince and add into pan – Till meat begins to brown
- Add apples, apricots, curry, cinnamon, tomato, coconut, S&P, Pepper into mixture
- Stir in, and cover pan to allow meat cook further – 5mins
- Add Vinegar and almonds into mixture and stir mildly for 1 minute
- Place mixture into baking pan/oven proof baking bowl
- For topping, mix cream and eggs into bowl, whisk until smooth
- Evenly spread topping atop mince mixture ensuring every area covered
- Place in oven for 25 minutes, till topping attains solid, and golden colour
- Remove from even and leave to cool for 5 minutes.
- Serve accordingly
