Ingredients (for 1 serving)
- Seeded/Wholemeal Flatbread (1)
- Egg (1)
- Chorizo (Meat of choice) (½ Cup)
- Spinach (½ Cup)
- Low fat grated cheese (¼ Cup)
Instructions
- In a bowl, mix egg, chorizo (or any meat or veg of choice) and spinach
- Place in microwave for 30 secs
- Remove and stir, then put in microwave for further 45 secs
- Spread egg mxture on flatbread
- Sprinkle cheese atop, as desired
- Put in micowave for 30 secs (until cheese melts)
- Serve and enjoy!
