- Spinach (1 Cup)
- Quinoa (½ Cup)
- Chickpeas (Drained) (½ Cup)
- Brussels Sprouts (7)
- Cherry Tomatoes (9)
- Parsnips (Chopped) (1 Cup)
- Red Kidney Beans (Drained) (½ Cup)
Instructions
- Boil Quinoa till cooked Boil Brussel Sprouts till cooked/soft
- Wash Spinach thoroughly
- Boil Parsnips till soft
- In serving bowl, lay the spinach leaves across
- Add sprouts, quinoa, chickpea, beans and parsnips atop
