- 2000 g Chicken Breast
- 225 g Parmesan cheese (Grated)
- 3 Tbsp Oregano
- 3 Tbsp Rosemary
- 2 Tbsp Chilli Flakes
Topping
- 300 g Pizza Tomato & Herb Sauce (Or Tomato Marinara)
- 3 Tbsp Parmesan cheese (Grated)
- 60 g Wild Rockets
- 3 Bell Pepper (Sliced)
- 1 Ripe Plantain (Sliced) (Optional)
- 170 g Low fat/Gluten/Dairy free Mozzarella (Or low fat mozzarella)

Instructions
- Set oven to 180c
- Cut chicken breast into halves and put in a food processor
- Add in other spices and parmesan cheese - pulverise/blend till mixed and minced
- Line a baking tray with greaseproof paper and add the minced mixture. Press down to attain a thin Base ** Tip: use any excess chicken mixture and form another pizza Base if it's too thick.
- Bake in oven for 15-18mins until chicken has cooked through
- Remove from oven and add topping ingredients in the order shown above ** Feel free to add any additional toppings of choice
- Return the pizza into the oven and bake for another 5-7 minutes, until the mozzarella is melted
- Remove from the oven and allow to cool for 5 minutes before engaging!
