Ingredients (for 4 servings)
- Brussel Sprout (200g)
- Coriander (1 Cup)
- Sweet Potato (White Fleshed) (2)
- Sweet Potato (700g)
- Chicken Breast Fillet (135g each) – 4
- Bbq Sauce (1 cup)
- Balsamic Vinegar (2 Tbsp)
- Bell Peppers (4)
- Courgette (2)
- Chilli Flakes (1 Tbsp)
Instructions
- Cut the courgettes and sweet potatoes into small dices
- Cut the bell peppers into small rectangular strips
- Set oven to 180C
- In a baking tray, pour in courgettes, sweet potatoes and bell peppers. Season with sea salt and black pepper
- Place in oven for 25-30 mins, keep an eye on it, piercing a fork through it to check when ready –
- While the sweet potatoes are in the oven, boil brussels sprouts in small pot till soft (check that you can piece a fork through it )
- Dice the chicken fillet into square chunks, season with black pepper, sea salt and bbq sauce and fry in small pot/pan till inside completely white
- Once the sweet potato mixture is ready, mix in brussels sprouts with vinegar and chilli flakes
- Serve alongside diced chicken and sprinkle coriander atop
