Ingredients
- 800 g Okra
- 4 Sweet Pepper
- 8 Bell Pepper
- 6 Tomato
- 1200 ml Chopped Tinned Tomato
- 2 Scotch Bonnet (Or Chillis)
- 2 Red Onion
- 300 g Kale
- 300 g Frozen Shrimps (Or Seafood Mix)
- 1200 g Chicken Drumsticks

Instructions
- De-scale chicken, season (salt, curry powder, oregano, thyme) and boil (with onion/garlic) till cooked
- In a blender or food processor, pulse the peppers, tomatoes (chopped and whole), onion, scotch bonnets till fine mix attained
- Pour pepper mix into a large pan/skillet/pot and fry on high heat for 20 minutes till the sauce thickens (spice with sea salt, oregano, black pepper, thyme and chicken stock)
- Chop okra into small chunks and add into the stew pot, along with the shrimps. Stir in and allow to cook for 5 minutes
- Chop the kale and add it into the pot. Stir in till fully integrated
- Add in boiled chicken (with the rest of stock) and mix thoroughly
- In another pot, boil plantain (with or without skin)
- Dish plantain and okra sauce and enjoy!
