Quick and Simple!; This breakfast meal didn’t take long to put together, and once again, fits into my morning schedule. Less than 15 minutes and I was done, fed and ready to get on with my day!
Ingredients (for 1 serving)
- Sweet Pepper (1)
- Eggs (3)
- Onion (½)
- Courgette (½)
- Garlic [Cloves] (½)
- Low Fat Grated Cheese (2 Tbsp)
- Oregano (1 Tsp)
- Sea Salt & Pepper (10ml)
Instructions
- Slice sweet pepper across middle and remove seeds
- Place sweet pepper In oven (180°C) for 10-12 minutes
- Dice onion, courgette and garlic into fine bits
- In Frying pan, add eggs, onions, garlic, courgette and seasoning
- Stir with spatula until egg is cooked (as cooked as you prefer)
- Stuff the egg into the sweet pepper, spreading evenly
- Sprinkle cheese atop evenly across egg
- Place the stuffed pepper back into the oven for a further 5 minutes (till cheese melts)
- Remove from oven, ready to serve
- Leave to cool down for a few minutes before serving
