Ingredients (for 6 servings)
- Buckwheat Flour (125g)
- Courgette (grated) (1)
- Carrot (grated) (2)
- Eggs (2)
- Coconut Oil (45g)
- Carob Fruit Syrup (120ml)
- Soy/Dairy Free Milk (200ml)
- Egg White (1)
Instructions
- Set oven to 180C
- Mix al ingredients (except oil) together in large mixing bowl (using either wooden spoon or hand mixer)
- line Muffin pan with oil
- Even distribute/spread mixture in muffin pots/pan
- Place pan in oven for 25-30 mins
- Remove from oven and allow to stand for 10 minutes before serving or storing.
