Ingredients (for 2 servings)
- Eggs (2)
- Sun-dried Tomato (2 Tbsp)
- Spinach (1 Cup)
- Pistachio (Optional) (2 Tbsp)
- Chilli Sauce (1 Tbsp)
- Walnut (2 Tbsp)
- Celery (Chopped) (4 Stalks)
- Cous Cous (1 Cup)
- Balsamic Vinegar (1 Tbsp)
- Wholemeal Tortilla Wraps (2)
Instructions
- Fry eggs in pan (using coconut oil); scrambling it in the process
- Place all ingredients onto a cutting board, and chop with large sharpe knife
- As you chop the ingredients, use the knife to mix the ingredients
- Once chopped, add lemon or lime juice (if wanted) or basamic vinegar
- Place the chopped mixture onto wholemeal tortilla
- Fold in the sides of the tortilla and cup the ingredients in to pack tightly
- Once roled over, slice wrap at the middle point; serve and enjoy!
* Ps: For other protein options other than egg, you can use chicken, edamame beans, red or black kidney beans or lentils
