- 8 Frankfurters or Chorizo
- 6 Eggs
- 6 Egg Whites
- 1 Cup Kale
- 1 Cup Green Bell Pepper or red
- 5 Spring Onions
- 1.5 Cups Lacto-Free Grated Cheese Or normal grated cheese

Instructions
- Set oven to 180C
- Dice frankfurters, spring onions and bell peppers into small chunks
- In a large mixing bowl, mix above with rest of ingredients (except cheese)
- Season with salt & pepper (and other seasonings of choice)
- Grease muffin tray with rapseed oil or butter
- Pour in mixture evenly across muffin pods; filling each pod 3/4 of the way
- Sprinkle cheese evenly atop egg mixture in pods
- Place in oven for 25mins, until muffin is firm and cheese is melted
- Let the muffins stand for 5 minutes, and enjoy immediately or store in air-tight container for a maximum of 4 days.
