Ingredients
- 1000 g lean Beef Mince
- 60 g Sweetcorn
- 250 ml Tomato Marinara Sauce (I used Jollof tomato sauce)
- 2 Eggs
- 1 Onion
- 200 g Cous Cous (Cooked)
- 60 g Lacto-Free Grated Cheese
- 30 g Chopped Walnuts (Optional)
- 15 ml Coconut Oil
- 2 cloves garlic
- 10 ml Ground Cayenne Pepper

Instructions
- Set oven to 180C
- Mix all ingredients (except marinara and cheese) in a large bowl
- Grease baking tray with coconut oil. (Tip: dab some oil on a sheet of kitchen roll and use that to grease the pan. That way you avoid oil swimming in bits of the pan)
- Spread mixture in the tray evenly
- Pour marinara/tomato sauce evenly over mixture
- Sprinkle grated cheese on top of the marinara sauce
- Place baking tray in oven for 25 - 30 minutes
- Remove from oven and allow to cool down (5-10 minutes) so it doesn’t break
- Divide Meatloaf into servings and serve!
