Ingredients (for 4 servings)
- Lean Turkey Mince (500g)
- Sweetcorn (30g)
- Tomato Marinara [Homemade] (100ml)
- Grated Cheese (30g)
- Cayenne Pepper (10ml)
- Cous Cous /Quinoa [cooked] (100ml)
- Eggs (1)
- Garlic Cloves (2)
- Onion (½)
- Sea Salt & Pepper (10ml)
- Coconut Oil (15ml)
- Walnut [chopped] [optional] (30g)
Instructions
- Mix all ingredients (except marinara and cheese) in large bowl
- Line coconut oil on baking tray
- Spread mixture I tray evenly
- Pour marinara/tomato sauce evenly over mixture
- Sprinkle grated cheese atop marinara
- Set oven to 180°C
- Place baking tray in oven for 25 minutes
- Remove from oven and allow to cool down (5-10 minutes) so it doesn’t break
- Divide Meatloaf into servings and serve
* Can serve with a side of Qiunoa, Sweet Potato, or Wild Rice
