Ingredients (for 4 servings)
- Chicken Breast Fillet (4)
- Bell Pepper (3)
- Red Onion (1)
- Olive Oil (2 Tbsp)
- Oregano/Smoked Paprika (1 Tbsp)
- Sea salt & Pepper (2 Pinches)
- Salsa (300g)
- Brown Rice/Bulgur Wheat (Cooked) (250g)
- Black/Red/White Kidney beans (Can) (1)
- Sweetcorn (Can) (160g)
- Low fat (Lacto-Free) grated cheese (1 Cup)
- Lime (1)
- Coriander
Instructions
- Preheat oven to 200C
- Line baking sheet with foil
- Dice onions and peppers into thin strips
- Place the chicken, pepper,and onions alongside each other the baking sheet and drizzle with oil
- Sprinkle the seasoning evenly over the chicken
- Add salt and pepper to the chicken
- Top each chicken breast with a generous pour of salsa
- Bake in oven for 25 minutes
- Rest chicken for 10 minutes, before sliing into strips
- Add a base of brown rice/bulgur wheat to the serving bowl/plate
- Top each with scoop of black beans, sweetcorn, salsa, cheese, peppers and onions and sliced chicken
- Garnish with coriander and lime wedge
