Ingredients (for 6 servings)
- Crab Eye (or Nigerian/Black Eye) Beans (400g)
- Water (1L)
- Coconut Oil (100ml)
- Red Onion (1)
- Smoked Mackerel (250g)
- Scotch Bonnet (1)
- Maggi Cube (2)
- Plantain (1)
- Spinach (Chopped) (1 Cup)
- Sea Salt & Pepper
Instructions
- Soak the beans in water overnight (to allow to soften and swell)
- Put the beans and water in a pot; bring to boil
- Skim off the layer of foam from the top and continue to simmer on medium heat (15mins)
- Pour in the coconut oil, onion and scotch bonnet & continue simmering for 1hr (till bean is done to your taste)
- While bean is simmering, slice the plantain into thin discs, and tear mackerel into small chunks/bits
- About 40 mins in, add in the maggi, plantain, mackerel and any preferred spices – Cover the pot and leave till plantain Is done (and soft)
- Once plantain is cooked, add in the chopped spinach and stir thoroughly to ensure its is covered. Don’t let it cook/wilt for too long before taking off the hob.
- Serve immediately with protein (Fish/Chicken etc) alone or with side of quinoa/healhy grain if consuming now, or allow to cool before storing away for meal prep.
