Ingredients (for 6 servings)
- Spinach (500g)
- Mixed Chillies (100g)
- Red Onion (1)
- Garlic Cloves (2)
- Bell Pepper (4)
- Seasoning (Sea Salt, Pepper, Oregano, Maggi etc)
- Scotch Bonnet (1)
- Seafood Mix (Calamari/Shrimps/Mussels) (300g)
- Smoked Mackerel (150g)
Instructions
- Cut the bell peppers, chilies, onions and garlic into quarters and blend with a little water till smooth consistency
- Pour mixture in pot on medium to high heat, cover pot and allow to cook for 20mins
- After 20mins, add a 1tbsp of tomato chilli puree, maggi and sea salt and cook for further 5 mins
- While tomato stew is cooking, chop mackarel into bits and leave on side
- Once stew is ready, add in mackarel and other seafood. Add seasoning in as well
- Mix together and let cook for 5 – 7 mins
- Chop the spinach into small bits and slowly add into stew pot
- Keep stirring the spinach as you add in gradually ( it might seem like a lot, but as it wilts, you will be able to fit more into the pot/stew)
- Once all is added in, stir and cook for further 4-5 mins before taking off the hub (add in any further spices/pepper as you see fit – I added in more chilli because I like it Hot!)
- Serve with side of grain (quinoa/rice/bulgur wheat) or/and plantain
- Enjoy!
