- 1 Red Onion
- 1 Kg Chicken
- 150 g Mackerel Fillets
- 4 Green Bell Pepper
- 3 Tins Chopped Tinned Tomato

Instructions
Chicken Stew
- In one pot, add in chicken, season and add spices, garlic and onion and boil till cooked
- While the chicken is boiling, blend 1 onion with tinned tomatoes and bell peppers and pour mixture into a pot
- While on medium heat, cook the tomato mixture till it is slightly thicker in consistency, and tastes less of raw tomato
- (Be sure to season the mixture as you go along to your desire)
- Cook for about 15-20mins
- Once stew is thicker, and starts to bubble, add in chicken and mackerel (chopped) and stir till thoroughly integrated
- Allow to cook/simmer for further 7-10 minutes
- It should now be ready; serve with kale ewedu atop and enjoy with Oat fufu
Substitute Ewedu
- Blend Kale and spinach with water
- Add in egusi (soaked) and set aside
- In Small pot, combine soaked egusi and ewedu mix till it begins to boil and mixture has a thicker consistency
Oat Swallow
- Blend Oats and add in water
- Pour mixture into pot and bring to boil
- As it boils, one begins curdle, stir thoroughly to get solid texture
