Ingredients
Dry Ingredients
- 450 g Self Raising Flour (Gluten Free) Or 400g Blended Oats
- 2 tsp Baking Soda
- 1 tsp Baking Powder
- 100 g Organic Unrefined Cane Sugar
- 4 Oranges Orange Zest
Wet Ingredients
- 175 g Fat Free Greek Yoghurt
- 250 ml Soya Milk
- 4 Oranges Fresh Orange Juice
- 1 Tbsp Rapseed Oil
- 4 Egg Whites
- 4 Tbsp Vanilla Extract
Glaze
- 1 Orange Fresh Orange Juice
- 1 Tbsp Honey

Instructions
- Set the oven to 180C
- Separate the egg whites from the yolk, and fluff the egg (which vigorously by hand or hand mixer till puffed and foamy). Keep yolk in small cup
- Mix the dry ingredients in one bowl, the wet ingredients in another bowl.
- Mix the wet ingredients till smooth mixture attained
- Combine the two mixtures and mix till fully integrated (the dough should not be too thick, but not too runny. If runny, add either another egg or quarter cup of milk)
- Line a baking tray/Cake Tin with parchment paper, and pour in dough
- Bake for 30 - 40 minutes. Pierce with a knife occasionally after and remove from oven when the knife comes out clear)
To Make the Glaze
- In a small pot, heat up the honey till its less viscous, and add in the orange juice
- (can add in 1tbsp of sugar if you please), stir the mixture for about 3 - 4 mins
- Pour straight from the pot on top of the cake (evenly) and allow to set/ cool
- Enjoy!
