Basically, this came about as an experiment from me wanting plantain and eggs for breakfast, but not wanting the usual/boring way! Threw in a few extra ingredients here and there, which ultimately added to the yumm factor... who doesn't like quiches! Here's your healthy alternative! 🙂

Ingredients
- 1 Green Plantain
- 1 Ripe Plantain (or you can use 2 of the same plantain)
- 4 Eggs
- 2 Green Bell Pepper (Or Red)
- 2 Tomato
- 1 Avocado (feel free to add a second)
- 2 cups Kale (Or spinach)
- 1 Red Onion
- 100 g Shittake Mushrooms (Optional)

Instructions
- Chop peppers, kale tomato, red onion into tiny pieces (either with a knife or food processor)
- De-skin and mash avocado in a small bowl (add a little salt)
- Peel and cut the plantain into small semi-circular slices
- Chop the mushroom into small dices
- **(an easier alternative is to put all ingredients, except egg and plantain, into a food processor, and get into small bits)
- In a large mixing bowl, add chopped vegetables, plantain dices and eggs, mix together
- Add sea salt, pepper, oregano, rosemary, chilli pepper, or any other spices of your desire
- Set oven to 180C
- Stir mixture till fully integrated
- Line baking tray with a little oil, and pour mixture inside - spread out evenly
- Bake for 30 - 40mins - till the top begins to brown/solidify (put a knife through to ensure it is not still liquid on the inside)
- Remove from oven and allow to cool for 5-7 minutes. Serve immediately, Enjoy or Store for Meal Prep! 🙂
