Ingredients
- 6 Plantain (Ripe, but not overly ripe - you want it to be bright yellow)
- 5 Tbsp Coconut Oil
- 3 Tbsp Ground Cinammon
- 2 Tsp Vanilla Extract
- 3 Tsp Seas Salt
- 1/2 Cup Oat flour (Optional - It allows it to be more sturdy, depending on the ripeness of your plantain)

Instructions
- Peel the plantain and blend with 1 cup of water too form a pureé
- Pout the plantain puree into a large bowl and add in the remaining ingredients - whisk thoroughly till fully integrated
- Grease the (hot) surfaces of the waffle maker with some coconut oil, and pour in the batter (Depending on how large or deep your waffle maker is, you don't want to overfill it, or it will overflow when closed)
- Allow to cook for 10 minutes before removing carefully and placing on a plate to cool for about 5mins
- - (Once Again, depending on the ripeness of your plantain, this may take longer - really ripe plantain will not really set and may burn if cooked for too long, hence, some flour is added to quicken the process) - Also, optionally, when out of the waffle maker, you can choose to pop in the oven for a further 8 mins before serving
