Ingredients (for 12 pancakes)
- Buckwheat Flour (100g)
- Ground Cinnamon (1 Tsp)
- Ground Nutmeg (1 Tsp)
- Brown Sugar (1 Tbsp)
- Sea Salt (½ Tsp)
- Baking Powder (2½ Tsp)
- Almond/Soya Milk (350ml)
- Egg (1)
- Sweet Potatoes (3)
Instructions
- In a large pot, Boil the potatoes till soft & cut up into small bits
- In blender or food processor, add potato chunks and milk; blend till smooth and creamy
- Mix wet and dry ingredients separately
- Wet ingredients: Sweet potato, milk, egg
- Add wet mix to dry mix
- Fry on drop of coconut oil on a non-stick pan
- Serve with carob fruit syrup or any syrup of choice & fruits or eggs and spinach
