Ingredients (for 12 Servings)
- Sweet Potato or Plantain (I used both) (600g)
- Eggs (5)
- Veggies (red onion, spring onion, kale etc) (2 Cups)
- Maggi cubes (1)
- Ground Beef/Mince/Lean Corned Beef (120g)
- Coconut or Rapseed Oil (¼ Cup)
- Soy Milk (¼ Cup)
- Seasoning
Instructions
- Peel, boil and mash sweet potato/plantain, chop veggies into small bits
- In Bowl, whisk eggs, maggi, salt, seasoning, spices etc, kale and mince meat/corned beef
- Set oven to 180C
- Mix egg mixture with mash
- Grease muffin pie tray and pour mixture in
- Bake for 25-30 mins (piece through one with a fork occasionally to test and only remove from oven when completely dry within)
- Remove from oven and allow to cool/set for 5 mins before serving or storing
