- 1 Kg Baby Potatoes
- 2 Stalks Spring Onion
- 4 Avocado
- 150 g Deli Cooked Ham (Or Turkey Slices)
- 320 g Sweetcorn

Instructions
- Chop up the potatoes into quarters (4 pieces)
- Boil the potatoes till soft
- While potato is boiling, de-skin the avocado and mash either manually or in a food processor. (Sprinkle in a little sea salt while mashing for added taste)
- If including the ham, chop it up into tiny pieces
- Ina large bowl, mix all ingredients till fully incorporated and covered in avocado dressing
- ...and just like that, you're done! Enjoy!
- *Tip* For more protein/less fat content, swap the following alternatives: Potato -> Sweet Potato Ham -> Chicken Breast/Turkey slices
