Ingredients (for 8 Servings)
- Lean Turkey Mince/Soy Mince (I used Both) (600g)
- Red Onion (2)
- Parsley (Bunch) (1 Cup)
- Green Beans (200g)
- Bell Pepper (2)
- Sweet pepper (2)
- Egg (8)
- Worcestershire Sauce (3 Tbsp)
- Soy Sauce (3) Tbsp
- Balsamic Vinegar (3 Tbsp)
- Sea Salt & Pepper (10ml)
- Coconut Oil (10ml)
- Garlic (Clove) (2)
Instructions
- Cut peppers, onions and garlic into bite sized pieces
- Chop the parsley
- Cut the green beans into half and put into a small bowl with boiling water. Leave for 7mins then transfer into cold water for 30 secs. Drain and set aside
- With oil in pot, add in onions and garlic; let fry for 1 mins before adding in mince
- Once mince is in, season with salt & pepper, and any other chilli seasoning of desire ( I used oregano, smoked paprika, Nigerian chilli and Maggi)
- Fry till mince is cooked (for the turkey mince, till it is white; for soy mince, till slightly browner)
- Add in the peppers and beans and fry further, adding the Worcestershire sauce, soy sauce and vinegar in
- Allow to simmer for 2 mins
- It is now ready, Serve in bowl or tupperware
- Fry egg (one per portion) and place on hash sprinkle parsley atop
